Why can't they use a natural oil or water to power hydraulic machinery/elevators?

Why? Because this morning I saw on the news that an elevator malfunctioned and spilled hydraulic oil all over the place. That's a hazard to the environment. Why can't they use another liquid?

Water is excellent as a hydraulic fluid because it doesn't compress. Its rarely used because it can cause corrosion.

Other oils have the problem of compressing and so don't work.
